I was wondering, since Scaffolding seems to have been deprecated after CI 1.6, was anything implemented to replace that functionality? Would be nice to have..

Just FYI, deprecated just means it's discouraged and will not be developed any longer. It's still available for you to use. Just be careful to disable it. It might be really nice for CI to do scaffolding based on a username and password login (that you'd have to change from the default of course) for navigating and editing the entire database. Maybe you could send that as a feature request. Personally I like phpMyAdmin and Navicat.
