I noticed exactly this today with FF 3.5.x on Vista at work... all correct XML headers are being sent as normal, for once the acid test was viewing it in IE.
Its possible that I updated some add ons that caused it, or maybe just that it was Monday... Its fine on FF3.6 on my Mac@home.
