Built in email helper

Hello

I realize now that I should have used the email class, but I didn't. The result is that I have the send email function scattered across my application and now, once it's been deployed, I've hit a snag: I can't set what the sender's email should be. It's just using the server's default. How can I set the sender's email easily (so that the email that is sent out appears to come from [email protected] for example) and only once, so that it works for all my function calls accross the entire application?
