Capture emails

Is there anyway to 'capture' emails in CI? What I'd like to do is capture emails sent to users email addresses.

For example - if someone emails "[email protected]" - I can capture that email in CI (maybe via a cron job) and do something with it....

I tried searching - didnt find much... thanks in advance.
