I do most of my programming on OS X and I've really taken a fancy to Coda.
If I'm in windows I'll usually use Eclipse with the plugins listed by others above.

We should have a sticky because I see this topic appear everyday.
I use e-texteditor, not strictly an IDE, but it does have FTP support, Web Preview with other little amazing features.

everyone will use their own 'sword' based on daily useage
it depends on how you getting used with the tools it self... once you get used with it, even using notepad, you can doing incredible things in php
