We created www.filmannex.com, It's not as big as others on this thread but I think it's a good example of the power of CI.

2 servers (xeon quad core, 8gb ram), one for the php, one for mysql
25000 users
20.000 unique visits a day

ffmpeg to convert uploaded movies

the servers were chosen more for the bandwidth that came with the plan than for the real power of the machine, it probably could run on cheaper hardware.
