I've put in the referrer check. Is it easy to change?

Please excuse my lack of knowledge on the subject but if I use the non DB sessions, the cookie is stored on the users computer yes? If so, if I was to set a session variable for a user, I would have to validate the data before setting it and later on when retrieving it? Can I use the form validation class to have some rules set up both the setting and retrieving of variables?
