There is no meaning to use MATCH....AGAINST.... with a non fulltext since it's not designed to work that way. If you could get the same result with a normal WHERE condition, why would you insist to do it in the MATCH AGAINST anyway? You could even go as far as using WHERE IN for a multi-categories search.
I could not understand why you would like to drop the benefit of using a primary key index, and use a slower one when it's not really needed to be.
